maybe you are misremembering and are thinking of that "scream" sequence, not the actual fight with him, would test more with the save.
i actually just tested doing what you did though, and i found out asmund's "!" stop in the prison vanishes if you do king harald's boss fight, sooo... the only explanation is you have 7 (or more) AGI, which secretly unlocks the stops in the top left of the main floor early, got the jester badge there, gave it to the jester, fought harald and missed out on the actual asmund fight, which gives the knight badge and the key to access the way to the last optional fight and prince badge.
i am not sure it is intended, see if that is what happened.
Uh, Asmund (the headless knight) drops the knight badge and iron key.
The key is needed to open that door in the west wing (left part) of the main floor (stop 35 on the map in my guide).
That badge is the first one you can obtain of three (two can be used to free Bread and all three have their use with the cloaked ferryman), but only one is required for that jester ghost to proceed. Now, since you mentioned an underground city, but this all happens in the castle, have you given the knight badge to the jester? The one you give him is gone forever, so you need to find the prince badge to free Bread (or load a previous save and give him the jester badge you find after the knight one).
I do recommend getting all three, show the ferryman the jester one for some extra coins (and maybe early gargoyle farming for 3 mosses, if you don't have enough for the moss bracelet from Chet), knight badge just to mine the daily blood crystals if you want, and give the jester badge away to proceed.
The boss also is easier (halved HP) if you keep and show the knight badge, while the prince badge skips the fight and changes the reward to a +1 CHA equip instead that can be traded whenever way later in the game (but i am keeping it).

The mission itself is only one: talk to either village’s shopkeeper to get some bags and go search for the thief to retrieve the fruits, in any way. You won’t get any useful indication, but first you are supposed to visit the place where you fought the demon boss (just west of the tavern), then the place where you found the lizard spy (just south of the bull village).
uhh, try sleeping a few days at the tavern, enter the villages, check their respective room/tent and talk to the shopkeepers to see if maybe you just skipped the dialogues and didn't notice, even better if you can load a save in part 3 of the war and try again, the requisite is just waiting 2 days after part 3... also np~

Considering it’s the last battle for this escape route, i hope you rested with a bonfire kit at stop 2 or bathed at stop 8 for the x1,5 HP and MP bonuses, and kept 5 (6 if upgraded with fabric given to Witer) HP and MP potions (either from your bag at stops 37-38, which i HIGHLY recommend getting before coming here, as you won’t automatically get the items back after leaving, and/or the infirmary at stops 28-29), also a full flask, see stops 23-25 if you need info on how to refill it, while fire bombs and fuse grenades won’t do much due to his fire resistance, and throwing axes or knives (from the tribes’shops) are pretty weak (the soul solvent shouldn’t be needed, should you still have it).
This majestic beast has 3000 HP!... But the battle ends after 800 HP of damage (so at 2200 HP), which is fairly doable, actually, i accidentally won (albeit with a handful of lucky dodges and crits) with no stat points invested! The fight is pretty straightforward, despite his attacks, he won’t stun or paralyze, but just do mid or sometimes decently high damage, nothing else, and a defense on par with the mother spider, the problem arising if you enchanted your sword, as he resists those elements, and the offensive items being pretty much useless (even if the lobber goggles might make throwing axes or knives decent if your sword attacks do little damage, like 20-30), he also can’t dodge, and is (unfortunately~) immune to lust, but doesn’t tease. Since it’s going to be a long fight in which the potions are going to be the best items, the rusted spoon can be a good choice (especially if you can’t bind up much or heals less than around 100 HP), the championship belt is especially good here too. When it comes to the actual moves, normal attacks/throwing axes or knives should be most of your attacks, with bind up used whenever you know no healing is wasted, or a HP potion if it’s on cooldown or you are low on MP, also try to use a MP potion if your HP are high enough and can fully make use of it, the flask is also good whenever you see both HP and MP could use some healing, not necessarily when you are low on them, use leaping slash only if you have MP to spare and preferably later in the battle, for the last 200 HP or so, in order to not be overconfident and run out of MP. It is a battle of attrition, but having potions should honestly make it a favourable matchup even at low stats (i’m also taking into account the failed AGI check to start at lower HP).
Once his HP hit 2200, our fav prey jumps into the river and escapes...
the gate in rasmus's trial dungeon is for later, the windmill is not to be entered freely, the mountains are done after the mole dungeon, the last few updates are a few quests in the tavern and chet at the campsite (also bring back the horse to horace if you haven't)

... If you mean what to do after Einar's quest about gathering ingredients for the soup with him, you need to also complete Kith's quest about defeating a yeti, and after at least 2 days of being in the village, talk to Rasmus in the pub; Einar should tell you about Rasmus's trial after all that.

it depends on how you finished the war, this is after coming back from the mountains (taken from my guide):
cook labrador tea, find star shards in dungeons or offering tea to the dragon, feed the slime pet, pray to the dragon offering the storybook (if you got it from king harald) and throw the block he gives in the bull temple pool. all stuff you can do after coming back from the mountains tho, but no rush to lower it.
in the new quest, read the book chet gives you (in the key items) so you can use the parley skill on the katos (same spot he had during the festival quest, under the bull tribe); after the parley, tease him, so he becomes infatuated, and submit or lose to him.
i am assuming you have the campsite unlocked to get the quest btw.
